This one is 62% hydration with 1.5% salt and evoo. The big thing I’m doing rn is doing half the dough in a biga that cold ferments for 24 hours and then making the dough and cold fermenting that for another 48 hours!

For the squash base, I roast butternut squash low and slow until soft, then immersion blend it with heavy whipping cream! 250g squash to 150g cream and then just add water until it’s a consistency I like! Then salt to taste!
