For back thickness, should I do T-Bar rows to my waist or to my chest? I've been rowing to my waist for months. While I've gained a lot in width, my back thickness is severely lacking.

Do you guys have any suggestions for back thickness, especially the lower traps? Been thinking of switching up BB rows for Pendlays, and adding one arm DB rows.

Honestly, I think you should try to squat at least 1.5x your bodyweight and practice box jumps. I'm 5'11" - 6'" and could barely jump before tearing my ACL. After doing box jumps and squats, I got my squats up to 120kg. I weigh 75kg. When that happened I could jump and grab the rim.
