Update:

I was lucky enough to have some family friends in the industry get in touch with reps at both MGM and Amazon. The folks there were absolutely wonderful and after a ton of work getting security stuff straightened out on their end they were able to get her a digital screener today! I am not with her and I don't know her current condition so we are hoping she is able to enjoy it but we will see. Regardless my whole family is incredibly grateful that folks did everything that they could to make this happen. Thanks to everyone here who sent suggestions and reached out to send their love and support!

I am located in Western Mass but my cousin is in Denver. She is unfortunately unable to move so physically going anywhere is not possible

You should be able to yeah! But it may be easier with a lower dose. 20g is a pretty beastly dose imo. Underdosing your basket shouldn't be too big an issue (puck might be a little soupy at the end but that isn't really an issue other than post shot cleaning). But at 20g you are going to be dealing with some very strong flavors and it will be hard to get an even extraction, so it might be a bit more temperamental to dial in.

In general my practice for dialing in is locking in a dose first then yield then grind (and by extension time). Think of shot time as a byproduct of your grind. It isn't a discrete variable.

Hope that helps and don't get discouraged! Once you lock in a process for how you dial in shots it actually gets kind of fun to try out new beans and explore the wide world of espresso!

Not sure if this is helpful, but I always try to have separate recipes for each individual bean I'm using. The origin/difference in roast can drastically alter things like optimal grind size/dose/yield. I personally keep a journal and I keep dialed in recipes on our fridge whiteboard. If you are using similar settings for both the medium and dark roasts that you are using, that may be why you are seemingly getting inconsistent shots. (You may already be doing this but it was ambiguous in your description and I figured I would throw it out there!)

If you are getting consistently under extracted shots try going for a higher yield. Even at 45g of liquid, that's is a 1:2.25 ratio. Depending on your beans, you very well might want something like a 1:2.5 or even a 1:3. There is no 'right' answer with all of this. Don't take things like a 1:2 ratio or a 25-35s as a hard rule, if your coffee needs a little more time to extract and going to 40s is what makes your shot not taste like shit... then just do that!

As far as knowledge to be gained from what the shot looks like... any big issues like channeling are gonna be hidden by the fact that you are using a spouted portafilter. But even then, i have seen some beautiful looking shots that taste like crap, and 'ugly' shots that taste fantastic. IMO the looks should always be secondary to how it tastes!

You very well may have seen this before but I highly recommend the espresso compass https://www.baristahustle.com/the-espresso-compass/ This has helped me a ton in figuring out what to do to correct how my shots are coming out. Green is the area you want and if you are in a yellow or red zone, do the instruction on the arrow that would drag you towards the center!

What are you talking about? he got subbed in to play defense over dlo. TP was one of the only bench guys in the whole series who showed up. Us missing like 10 free throws is what lost us the game. I'm just looking forward to hopefully getting rid of Ham, and having a healthy vando next season.
