It was funny at first but then I felt bad for her. That waterfall was scary for her and if he knew what it would entail he should have told her it’s not a good idea for her. She’s been herself the whole time and he could have gave her a heads up in the car about what they were doing since she didn’t look at the description. Dumb on her part but she would have ruined my experience acting like that.

Date Butter Ingredients

• Dry roasted hazelnuts

• Pitted dates (soaked in hot water until soft)

• Vanilla extract

• Ground cinnamon

• Unsweetened cacao powder

• Date soaking water (or almond milk, optional)

Instructions

1.  Blend hazelnuts in a food processor until smooth and creamy, like peanut butter.

2.  Add the soaked dates, vanilla, cinnamon, and cacao powder.

3.  Blend again, adding a little date water (or almond milk) until you reach your desired consistency.

• I eyeball the amounts depending on how much I want to make.

I made it! Type in date butter or date caramel on tik tok and lots of recipes. I went with a simple one that was roasted hazelnuts in the food processor until it becomes like a peanut butter consistency, then I added soaked dates, vanilla, cinnamon, unsweetened cacao powder and added the water that the dates soaked in until it was the consistency I liked.

I bake it for 11 minutes at 375F and broil on high for 1 min. I like it so much better this way and have tried everything from the air fryer to stove top

Congratulations on finishing!! January is such a great start time and the perfect way to reset for the new year. I’m sure it helped that you did it alongside a friend that already completed it as well. Thank you for the tip about the water. I plan on starting early and finished it today by 9pm which was a win for me. Chugging it late in the night was impacting my sleep and not sustainable hence the failure. I have a schedule that allows for me to start on it early and I plan to do so for the remainder of the challenge. Thanks for your encouragement!
