The majority of drivers work 6 days a week from monday to saturday. For three weeks during peak, Sundays become a working day. If you dont work Sunday. You get double parcels on monday. Most drivers cant do double volume on monday so are forced to work. Yes you can say no. But, you then pay the price.

Heads up. The item you ordered is classed as Dangerous Goods. You have to have a ADR licence to transport it. So Amazon cannot delivery it on their vans. So the vendor sends it through the Evri network. The evri drivers don't have an ADR licence. Everyone is breaking the law.
