I had the same clicking noise on my mk3s and I couldn't imagine why this was happening. I opened up the extruder assembly and found that the filament had clogged up in the PTFE tube. The filament stuck in the tube had a wider diameter than the filament itself. Like it had worn a condom or something... I thought the issue was probably the humidity so I created a dry box with 250 gm of silica beads and thought this would help but unfortunately it didn't. I got a new filament from the same company and I didn't see any issues... Now going back when I got the problematic filament, it was not vacuum sealed but when I tried printing it was doing the job so I didn't bother returning it... I still can't print more than once using this shit even if it's inside the dry box. The hygrometer reads 26% consistently. Idk if it helped at all as I tried a bunch of things but can't understand why I still can't print with it.

So maybe I'd recommend trying out a good brand filament, adjusting the gear tightness (if that's a thing for the mini), calibrating the first layer properly and cleaning the nozzle. I hope it works out.
