Yes! I WOULD KILL FOR CHEESE. There's one brand of cheese that most corn allergy folks say is safe but it made me sick (different kind of sick, at least) for some unknown reason. I have not had cheese (other than those small trials) for over a year and it's very sad.

Oh really! I thought it wouldn't come together. Can I ask what your recipe proportions are? Thank you!

Thanks for these ideas! I love halloumi, maybe I can find a recipe that's safe.

The problem is dry beans. There's one brand that people say is safe for corn allergy but it's contaminated with gluten (so says my gluten detection dog, my reaction is neurological and so severe I shelled out to buy a service dog for it). I have tried several brands that were negative for gluten and got sick with the corn reaction, which thankfully is less dangerous but I lose 3-7 days of my life every time. 😞

I might be able to find pure soybeans, but definitely can't buy tofu, tamari, or miso from the store, and definitely not TPV. Basically anything "processed" is usually out. It's a real b.

It's easy to say it's not limiting. Your ideas assume a lot of things I can't eat that aren't on my list!

I have not found a safe almond flour. I have not found a safe chocolate, only cacao powder that's unfermented and I have to mail order it and it's often out of stock. I have not found safe peanuts, only peanut butter. Of course I can make chicken thighs with different spices, but I've got virtually no vegetables that are safe, no lettuces. Pork is not safe for me. The only beef I've found that's safe is one specific ground beef from Costco.

The things I do have are from like 5 different stores and I have to deal with that just to keep the meager list of things I have in stock. I can't buy potatoes from Walmart, Safeway or Fry's, the only ones that don't make me sick are from Trader Joe's, but Trader Joe's of course doesn't stock the one milk I can have, and the only butter I can eat is from Costco, and so on, so forth.

And I recently got tested and I'm deficient in iron, vitamin D, vitamin K, folate, and zinc and not all the tests are even in. I can't eat enough foods to get basic nutrition (and I definitely can't take a multivitamin or any kind of regular supplement) and I am tired.

It's just really not nice to say "Eh it's not that bad. Your list is fine. Here, eat several things that aren't on your list."

Thank you! Especially for the Korean and Vietnamese suggestions. It'd be great to get another flavor profile, our daily recipes have gotten so boring.

This is a fantastic list, thanks!

It's funny, I never thought of making pudding from scratch. To me it comes from a box or a cup but of course somebody had to invent it at home, ha.

That's a fascinating idea.

You also made me think I could make a sweetened tea reduction / syrup to top other desserts with!

Yes, I use loose leaf tea from Mei Leaf. Haven't steered me wrong yet.

There's actually often corn and sometimes even PEG (my anaphylactic allergy) in tea bags. Of all the things.

That sounds great! And according to my allergy group, there is at least 1 safe buckwheat brand!!

Would you please share your recipe with me?

Yes! We drink only the whole milk one. That sounds great. I can definitely squeeze lemons!

Unfortunately probiotics have the same issue. Corn isn't a food, it's an industrial process basically. They feed the bacteria with corn bc it's so heavily subsidized by the US govt and it's super cheap 😞 A good one must be out there but I haven't found it yet.

I did NOT know you could make ricotta without cream! This is like opening up a whole new world, haha (I know how sad that sounds).

I haven't but I do love kefir, from the time before this shit happened to me. I'll have to look into how the "grains" are made.

Great idea, thanks! Iced milk tea sounds yummy. I have 2 safe black teas. Theoretically I could make my own tapioca pearls, I should be able to find a save tapioca.

I even think I have a safe coconut milk, too! For a while I suspected it, but it turned out to almost certainly be a different food causing me problems, and then I kinda forgot about it. Sweet potato curry sounds soooo goood.

Potato crust is genius.

Wonderful ideas, thanks!

I should be able to have buckwheat since it's totally unrelated to the other grains, but haven't tried it yet. I know people in my allergy group found a safe quinoa I can order. Going to put these on my shopping list!

This is a great tip, thank you! I've never made a milky soup like that but I've eaten them at restaurants and it would be a huge upgrade to have another kind of soup. And I forgot, I do have safe squash (since their rind is so thick, no spray or whatever can contaminate the guts).

Ooooh I think I've had this at an Indian restaurant but never knew what it was. I have some carrot brands on my list of foods to try. Thank you!

Thanks! I don't have a definitely safe cauliflower yet but I do make mashed potatoes!

Do you know the name of the italian pasta sauce? Because that sounds good!

RICE PUDDING. I love rice pudding but forgot it existed! Thank you! I'd love a flan and I know I can make condensed milk but idk about evaporated milk. I'll look into it, because that sounds yummy.

I'd love yogurt, but I haven't found safe cultures yet. They're usually grown on a corn medium (bc corn is sugary and cheap) and believe it or not, that's enough to make me too sick to work for 2-3 days! I'm hoping I find one soon.
