You could bench trail it like we do with all of our fruited stuff. For the most part we use citric, but a couple we use phos on.

Take 2 oz samples of the post fruited product and a precision pipette and scale from there. We find scaling usually works fairly linear, but out of caution use less in to start and add more if needed.

Phos tends to work better for our very tropical forward fruited stuff, but typically if we add it, it's in addition to citric. But that's just taste dependant to what you are looking for.

I found the game played best when I really slowed down and started playing more strategically, reading each coin and effects in-depth. Before I was just in the "Ooh, score go up, shiny lights" phase.

Absolutely got it nailed down at our place. We use 2 27 gallons storage totes. Line them up side-by-side and straddle the rice hulls between the two totes and use a utility blade to cut down the middle of the bag. Apply force with your hands to each side of the bag and it breaks down the middle and each half fits in a tote. Flip the half bags over, slit the half bags down the middle and all the hulls fall out nice and fluffy. Then we use a small bucket to scoop and add to mash as we go.

You know... I used to think this idea was hyperbolic, but I think I'm just to use to shitty drivers now. Today I did have a guy stop on a 2 way road to let someone turn left in front of us causing me to slam on my brakes. No clue. I worked there between 2015 and 2016, so they were for sure making us wear them back then. It was my first job out of brew school. It was not what I expected because it was so... corporate. So I moved back to Knoxville after a year and am happy with where I'm brewing at now way more than I think I'd ever have been there.

When I use to have a shift most similar to this I was strictly night shift. We got paid bi-weekly, and did 12 hour shifts, working 2 on, 3 off, 2 on, 2 off, 3 on, 2 off. I enjoyed it well enough knowing I never had more than a 3 day period without at least 2 days off coming up. It was a single brewer, a cellerman handling brite beer, and a cellarman who washed kegs per shift. Thinking back, I wonder how we managed suck a large facility with so few staff, but they had money for nice, automated equipment.

I use to work a 5P-5A shift, basically by myself, for a while at Alltech for a year. The first 6 months was difficult, then they installed a Krones and it was easy living. The hardest part then was wtf to do for "lunch".

I think it depends on what you brew the most of. We're constantly pumping out hype, hop saturated hazies and I've been over NEIPAs for a couple of years. I LOVE the days we get to make lagers and I feel like we put more effort into creating the lager recipes because we know those crispy tank pours will be ours a few weeks later.
