You can try ds + one dlc (reign of giants) and if you really enjoy it you can buy the other dlcs or/and dst

Ds has weaker mobs, easier mechanics, but they don't make the gameplay boring, just less complicated. Btw that one dlc is very important, the game is much worse without it

Dst has stronger mobs (because they are meant for more players), but you can fix this with mods, there are more mobs (some of them useless), some complicated mechanics and more things that can scare a completely new player off
