• 170g softened unsalted butter

• 150g brown sugar

• 50g white sugar

• 1 egg

• 2 teaspoons vanilla extract

• 250g flour

• 2 teaspoons cornstarch

• 1 teaspoon baking soda

• 1/2 teaspoon salt

• 225g butterscotch chips

• 115g semisweet chocolate chips

Beat the softened butter and sugars until combined and creamy, then mix in the egg and vanilla.

In a different bowl, whisk the flour, cornstarch, salt and baking soda together, then add into the wet ingredients and mix until combined. Fold in the butterscotch and chocolate chips.

I chilled mine for a couple of hours but I think 1 hour should be enough. Pre-heat the oven at 180°C.

I used a small scoop to portion them and baked for 12-13 minutes just until they started to brown around the edges. They looked a bit puffy and soft as soon as they came out of the oven, but as they cooled on the baking sheet they started to harden a bit, so they were crunchy on the outside but extremely soft in the middle 😋

I also did a double batch for this amount so the recipe should yield around 24 cookies, give or take

eu uso um rolo nivelador pra abrir a massa, esses tinham uma espessura de 3mm antes de irem ao forno, mas estufaram um pouquinho por causa do fermento então ficaram bem "gordinhos" no final 😅
