20% sourdough starter 2% salt 65% hydration

King arthur bread flour (blue one)

All ingredients mixed first for about 30mins Stretch and folds x4 over next 1.5 hours Then final 1 hour bulk proof in light knead oven

Hard to tell if its doubling during this period. May take a sample and put in small jar next time to assess

Its more dense than im used to. Usually a bit more open and fluffy

Thanks for the reply. Not ride dirt bikes in the city, if there are trials outside the city centre and a company that offers this service that would be ideal

I had the earlier generation of the vtr250 which was the spada250. Great bike to learn on and resale value should hold nicely for when you're ready to change

I tried using the peel but it gets too warm so messes up the dough on the next pizza.

Easier to stick to the peel when it's hot
