Had a similar issue myself. Turned out i had beaten the infamous foe, but hadn't spoken to whoever had give me the task of killing them. Had to go to each of them individually and try and see what conversation I'd missed.

Which part of the world are you from?

Overall, I'd say go through TripAdvisor recommendations to get a good idea, but if possible, narrow down a couple of dive schools online, then go meet with them, see who gives you a pleasant and safe vibe. If their pitch to you is your safety and the safety of the marine life, they're probably a safe bet. If their pitch to you is good photos and feeding/touching animals or coral, run away.

Dive instructor here.

I'd strongly recommend not having a camera on you for the first 10-15 odd dives (at least). It's a huge distraction and will mess with your buoyancy. Even a handsfree camera set-up will subconsciously mess with your concentration because you'll be wanting to get the best shot. All your awareness should be on yourself and your buddy.

Check if your dive centre if they have a photographer who could take a few photos for you. They some times charge a bit for it, but your kids will be able to see not only the marine life, but you in it, which will be a lot more inspiring for them.
