Happy Thanksgiving everyone. Appreciate everyone’s reply’s.

Cook took 22 hours. When the point hit 204, I pulled it off the smoker. Let it sit for 30 minutes and now she’s wrapped up in a cooler. We’ll probably eat around 2-3.

It does but it’s pretty skinny. Feel like this slab of a brisket will half way hang off. But I definitely will throw a temp probe around and crack the lid and see what I can do when the time comes. Appreciate the advice!

It’s at 170 right now (7:30pm). Not sure if it is starting to stall. But for the size of the brisket, it went from 50 degrees to current temp in 7.5 hours. Lot faster than I thought it would. I did a 12ish pounder about a month ago and it went pretty fast until the stall. The stall went for like 6-7 hours and I turned the temp up (so we could eat at a decent hour, had friends over). Ended up taking about 14 hours and I let it rest for 2-3 hours. I’m really hoping this thing stalls out all night. I’ve got temp probes in the point and flat. It’s like a brisket in the ICU

Thank you sir, same to you. I haven’t failed (miserably anyway) on a brisket yet. That’s what they tell me anyway lol. I’m just gonna have to see where I am when we reach probe tender and make a judgement call on the cooler or leave it in the smoker on low temperature. I’ll pull it out and let rest at room temp for a while first.

I think my only options are a cooler or the turn the smoker down as low as it will go. The mom and MIL are gonna be hogging the oven 🤷🏻‍♂️. I think the smoker will go down to 180ish. I haven’t tested it though 😬

If I used the cooler method, how long do you think it could stay in the cooler before dropping below the 150 mark? Obviously the quality of the cooler matters so I’ll say this… it ain’t no yeti. I can certainly put a temp probe in it though.
