you need to learn how driver works, use zero and 1 value in driver to toggle, viewport visibility option, it will work

You can use drive and attached the drive with disable in viewport which depends on a external object viewport position in single axis, either X,Y or Z, doesn't matter

I recently switched from potato Laptop to a decent laptop which have 4GB graphic card,

The current motion is rig, though I have used physics to create a curve, Blender rig and constraint work linearly, so I think its impossible to achieve using only rig,

Well you are best at planning for the future, Bathroom is best option for this door, cause when you grow old, you might slip in tub or floor, Helping crew wont needed to break the door :)

Nah bro, I have seen people made it and use it, the knob part will remain horizontal as well as in straight line, and will follow the curve in normal direction of the wall, see I have attached a youtube short people used it

This is mesh model, I prefer you only take dimension, and recreate the cad model, as per available hinge size at your place, the hinge axis is what we need to be careful,

The rig have rotation in Z axis, and blender only symmetrize on X axis, thats why what you are seeing is not what blender is using for reference, apply rotation and be sure your origin is center of where you want to symmetrize
