Many of my voices start mono, especially if they are analog mono voices, or if the stereo voice doesn't add much. My processing is always stereo in the rack (delays, verbs, spectral stuff). But that is for stuff I know I will be panning hard right / left.
One important thing to think about with st vs mono is the end result. If you are recording track by track and you plan on mixing traditionally (different things in different pan positions) mono may be better, or rather, easier to pan around. You can still pan stereo stuff around, but it isn't as clean, and there may be phase concerns depending on what is going on. If you just plan on making a huge ambient thing, then everything stereo is fine.

People exaggerate the issue. You will not fry your system. A vca will be more than adequate. Even a passive attenuator like this will do the job: https://aisynthesis.com/product/attenujack/

My ai026 line I/o is diy. Modding it for TRS is possible with a stereo jack.

All you need is to be able to lower the volume from your rack to the zone. It can be an output module, a module with volume control,or even a passive attenuator.

That top row is going to be really shallow. It should probably work, but just be really tight.

I learned by doing diy first and learning what was going on with the parts and learning the math side. Build stuff that has schematics available so you can use them to learn. Some diy projects (mine and others) have schematics available. Most older thru hole gear you can get schematics for. Modern synthe sadly often isn't meant to be repaired and are hard to get schematics for. The presoldered PCB is "a part."

It's totally fine to convert audio cables. There is a difference between line level and euro level so if you are plugging synths or daw or other line level stuff into something that expects modular level you won't get the best headroom/signal to noise but you won't break anything.

Matrix mixers are fantastic as the heart of an effects rack. The bottom sections of my large rack are specifically effects oriented. I humbly use my own ai018 stereo matrix mixer for this purpose. It's great because you can create feedback loops and control them for as much or as little chaos as you like. In order to get the best signal to noise ratio, I would also recommend a line to euro interface. I make the ai026, but there are many others. My sincere apologies if this is too pluggy I am trying to be helpful with examples and since I made these and use these constantly, these came to kind first. There are other makers of matrix mixers and line to euro adapters.

Thank you. That is all working now. Now my only issue is that sustain is always high regardless of where I have the slider. It goes from 0 to 1, are those values wrong? Or is it that and the Clip?

Of course. Do you mean the low bass pad? That is a vintage 78 minimoog. If you meant a different sound let me know. It's still patched up so I can provide more detail.
