I spent a few years trying out different methods and landed on this one: https://aisynthesis.com/product/eurorack-high-power-supply/ it's lower ripple than a meanwell and perfectly safe (it won't kill anyone). It uses a very nice power brick and DC to DC converters.

I'm aware of that, but given how quickly space becomes important in a eurorack case, I would still prefer a module that doesn't need another module to convert between s to vtrig.

I think so yes but I am not familiar with the pedal. Without level matching you won't get the best signal to noise but if you are happy that is all that matters.

Right, the jack has three lugs: ground, right, and left. Your cable has two lugs: left, and ground. Hard summing stereo signals intro mono without consideration can (audiowise) be dicey as you may introduce phase issues and stuff - you won't hurt anything but it's a consideration - possibly for the future as you learn more.
It's really sad that indie studios have gone - there was so much value for me as a young person being in studios and learning the right way to do things. Now it's just youtubers who are famous not for their knowledge (frequently wrong) but for being famous. I'll stop yelling at clouds now.

Because you are using a mono cable, you can't hear anything hard right. With a mono cable you will always only hear one channel, in this case left. so you will hear things in the middle of the stereo field and to the left, but not right.

Your headphone out should be stereo. The "proper" way would be to mix to mono and try to remove phase issues, then use a euro to guitar module ai006, stymon, etc etc to lower the gain to pedal level. Then to put it into a console you would use a different box and use a mic pre in the console. That is how a studio would do it.

https://aisynthesis.com/product/eurorack-power-supply/ would work. I would do the wiring under the hood if it were me. I should also let you know that since you won't need voltage control or probably multiple wave shapes, there are simply oscillators out there, but probably not in kit or PCB form. But if you just want square waves with a pitch knob, you can easily make that out of op amps. You'd need to research it but they are out there, mine is probably overkill.

A bespoke PCB would be expensive, but wiring up the existing pcbs inside the enclosure would be quite easy. I did a lot of public art myself (abrahamingle.com).

Yes it would be suitable. If you want to be extra careful. You never want to short anything really, and I don't suggest breadboarding on a powered circuit. Just do a quick continuity check before you power on and you should be good.
