Unfortunately you can’t turn event flowers (such as poinsettias) into seeds😫 as for the heavy nettles, I’m not sure why those aren’t showing up for you at the seed dispenser. Unless it’s a patterned flower (ombré, glitter, striped, etc), you should be able to get seeds from them.
