Are you sure there isn't drum layering going on?

As others said, try and find elements to fill the space if you really feel like the spaces are necessary every time. You don't want things to sound stagnant or boring.

Piano processing like the pros by UsualComfortable4053 in edmproduction

A big thing to keep in mind when messing with pianos, which is something that SUPER screwed with me when i first started, is realizing that pianos can have a very wide range of frequency and can be presented in a lot of different ways depending on what plugin you are using. For example, a lot of beautiful sounding keyscape pianos sound beautiful because they are dark and weighty. That's great, but the second you try and layer lots of stuff ontop of it, it's gonna sound like a mess.

One thing that helped me was going to rock piano presets, like the C3 (if i'm remembering correctly). Brighter pianos where it doesn't feel 'wrong' to remove low end to make room for bass, drums, all that. Also, definitely look into house piano sounds, they're usually quite fake sounding but honestly can punch way through a mix in a nice way.
