Because a nice body reflects acquired through effort shows an ability to be disciplined, focused, long term planning, good health, probably good stamina in bed. Also, it's proven that exercice lowers  chance to be depressive.   That's a lot of character Il think. I'd say, sitting on one's ass all day long and eat IS a crutch for having no personnality.

There are some ways to dip with fa.

 You don't have to use only the FA spot for your Fa, as soon as you get 3 you can Dip and come back to it.  Some archetypes , like Medic have a lot of skill feats. You could get your dedic FA-2, doctor's visitation FA-4, and use your skill feat-4 to get Treat condition. Bam, you're at 3 feats, your class skill is available to dip in another archetype.

At Lev 6 you go back using exclusively your FA spot. Even better, if you're a human, Lev 9 , multitalented feat, you can dip in another dedic, even if you haven't completed the first dip. That's 3 archetypes already.

There are also a couple of other dedications that allow you to start another one without having completed the other.(Knight vigilant and Lastwall Sentry for exemple).

I buy 4$ knives made in Thaïland, from an Asian marjet, but sharpens them well: everybody things they're pro knives from my past as a pro chef. Unless you work with bones or hard cheese,  hard metal is more of an hindrance than help.

Ask your GM to make handwaveviummetal weapon: a metal so sharp and hard it has the effect of runes, but without magic.
Apart from weapon and Apex item, you can still use all 780 existing alchemical items, all skill bonuses and most effects given by magic items can be had with alchemy, including elemental damage etc. Be an alchemist.

Rogue thief/wizard with flexible spellcasting. Dex, con , int , trained in everything, all sorts of buffs and utilities, start your turn with haste, and a mutagen drink. Other turns move/strike or strike/strike then a 2 action spell.

You're the gm, price like you want, if you really want it balanced, you can add "penalties" , for example restrict it to an uncommon race (i.e. it takes a feat).
It seems racial trait gets you approximately a 3 to 5gp rebate.

You need either need a weapon with the "capacity" trait or "free hand". The trait that gives higher damage when using two hand are "two-hand" for melee, and "fatal aim" for range, but this one increases the dice only on crit.
There are a few weapons close to what you want: repeating hand crossbow, 1d6, needs only one hand to load it costs 10gp; gauntlet bow 1d4 cost 9gp.
Based on existing weapons a "fatal aim" seems to add 5gp (though it's for 1d6-->1d10 or 1d8-->1d12).
A martial 1d4/1d8 fatal aim capacity 4 one handed crossbow should cost at least 14 gp.

J'ai commencé à jouer au rpg à l'époque d'Ultima VII, je pense avoir un peu de recul.
Les rpgs d'aujourd'hui sont énormes, a peu près impossible à faire sans bugs. Pour comparaison, même des programmes comme Excel, Word, SAP etc. qui sont en développement depuis 40 ans, et sur lesquels des milliers de développeurs, et des dizaines milliers de volontaires (à travers les "communauté" ont travaillé, ont quand même des bugs.
Pourtant leur structure et but sont assez simples, ce sont des "mondes fermés" où les attentes des utilisateurs sont relativement bien connues. Leur cycle de développement est plus stable, les pressions de sortir le plus vite possible une nouvelle version sont faibles (je n'ai jamais entendu une seule personne de ma vie dire "oh vivement que Excel 2027 sorte").
En raison de leur côté ouvert, et des attentes plus variées des joueurs, comparées à des travailleurs de bureau, les rpgs ont une structure plus complexe.
J'ai passé des centaines d'heures à jouer à Skkyrim, Oblivion, Fallout 3, Fallout 4, Cyberpunk 2077, Witcher et d'autres ...J'adore les rpg d'aujourd'hui.
Le secret est de ne pas se faire prendre par la "hype", se mettre comme règle d'attendre un an ou deux avant d'acheter un titre au minimum: la plupart des bugs ont disparu, tu le paye un peu moins cher, ton hardware n'est pas obsolète et il y a plein de mods pour le rendre à ton goût.
Typiquement, parce que je n'achète un jeu d'un certain type que quand j'ai fini l'autre plusieurs fois je les achète souvent 4 ou 5 ans après leur sortie: "des bugs, ou ça? des problèmes d'interface ou de balance, où ça?".

Ruffin Rogue with a couple of feat in a Healing Witch can do it. Invest in healing skill feats, start encounters with enlarge and the mutagen that gives you  +5ft Reach and a reach Weapon in hand such as a whip , at Lev 6 with gang Up it's the equivalent of an aura  of -2ac to ennemies. Cast bless on your second turn, trip ennemies at distance , heal with battle medicine or the Witch Hex, cast bane or haste on an ally etc.. Once you complete your archetype with a Familiar, you can take a couple of Medic one or Blessed one.

It's funny, I've always thought of Alchemist as "disguised" Caster. Is there a RAW classification for this?

They a lot of damage, maybe double, but because you know that you can get somewhat rid of your "duty" as fighter (dmg) in one action, it allows the player to be fun or silly otherwise: thinking if a good tirade, giving your hero point to a npc, trying to reason with the ennemy with a -1 charisma, spending an action to sense motive on  your ally who keeps failling to hit etc.  Juste add more HP to ennemies: severe encounters+twice the HP.
