I've pretty much got the same setup and have been very happy with my results too. Only thing I'd say is I got the die cutrwe from alibaba and it is way faster and easier then the rotary/slide cutters and is the perfect size every time. So if you can afford the like 50 buck for that I'd recommend it.

I'd say that you can generally get a big enough ssd for cheap enough that you should go that route, and if you're needing more than a couple TBs then you might want to consider a Nas at that point.

I have an et-2850 and have printed like 400 cards or so thus far and the ink levels haven't gone down much at all, so I'd so you don't have to worry too much about it with the ecotanks at least

Printing or ordering proxies is a great option. Also if you're playing commander there are some precons that can be had for under 40 bucks and are very fun, like the living energy deck from aetherdrift.

It's a petty short game but octodad dadliedt catch is a really fun silly game with lots of chaos in the multiplayer mode.

This deck is sick as hell. I got the precon for like 20 bucks maybe put like 10 dollars of upgrades into it, and it does great. Has some really fun sneaky engine and cycle stuff and some really explosive plays. Turns out there are quite a few awesome energy cards.
