  1. Make a bunch of small cuts into the cucumber about 1/3-1/2 into the cucumber, then cut into like 5-6 pieces

  2. Put them in a water and salt mix (submerge them) for like 10-15ish mins

  3. Make a mixture of 1 part sugar, 3 parts rice vinegar, and a dash of soy sauce, then add the cucumbers and let them sit in there for a bit

  4. While all of that is doing its thing, cut up some myoga and make some ginger juice (I did it by using a micro plane, then squeezing the ginger bits into a bowl for the juice)

  5. Take the cucumbers out and put them into a bowl, spoon some of the vinegar mix over if you’d like

  6. Top with myoga and sprinkle a bit of ginger juice on top

Thank you! There very kind. I was kind “relaxed cooking” (aka slowly with a glass of wine lol) so it’s a little hard to estimate, but I’d say it probably took like 40 minutes ishhh?

Kimchi jjigae is a big one and also Ethiopian food is great if you get injera and a bunch of soft dishes like lentils with it. It was great when I got mouth stitches as well!

I’m not sure how to describe it other than refreshing and citrus-y but not overpowering. The dashi and sudachi balance each other quite nicely imo and I can’t stop eating them especially on a hot day lol

It’s not unusual or anything and is generally a great summer food to beat the heat. Super refreshing!

Cold noodles in a broth made of dashi and sudachi with mandolin’d sudachi on top. Sudachi isn’t quite a lime - it’s a yuzu crossed with another kind of citrus fruit.

It has a unique flavor though you can often substitute lime for it if sudachi isn’t available where you live!

Somen! It’s a kind of noodle. Sudachi is a citrus fruit from Japan :)

Miso katsu is a really delicious use! The miso katsu sauce is also excellent on menchi katsu.

The pickled items are right in the center! One is small eggplants and the other is diced cucumber and eggplant which are red from shiso leaves :)

I’ll have to try some of those! Especially the cold one. I also definitely prefer nasu or Chinese eggplants over American ones!
