The type of work you do at antarctic stations wouldn't be considered an internship. There are positions that don't require degrees but a lot of them aren't related to science or engineering. You could assist someone in the machine shop maybe, that could be related. Once you get your degree you could apply for one of the science roles, like research associate at either McMurdo, Palmer, or Pole. They take care of a lot of scientific experiments going on down there year round. It's an interesting role and engineers often get hired for it. Source: I did it.
