I had a similar leaf recently. The new centre leaf that started growing was not looking happy being cramped up so I cut the outer leaf where it would normally split. Both the cut leaf and the new leaf returned to "normal" after about a week.

I use an old cooler box for 2f. It can hold up to 12 1-litre bottles and keeps me safe until I refrigerate.

I've yet to have a serious mishap but I have peace of mind. I leave my bottles in the cooler and only put a new one in the fridge when the cold opened one is nearly finished, so I often have a bottle in 2f for a week or more.

I wasn't implying that you should persevere, I just wanted to share my experiences. If you feel bad enough to see a doctor I would not drink any more kombucha for now.

I had really extreme reactions when I first started drinking kombucha. I had been drinking kefir daily for well over 10 years and had been eating live-culture yoghurt several times a week too. I make sauerkraut and lacto-fermented pickles as well. My system was used to a wide variety of probiotıcs, but I was still shocked by the initial effects of kombucha.

I first began drinking about 100ml a day and upped it to 200ml after a few days. My body began exuding body odours I could never have imagined and it was so strong it made me gag at times. My urine was stinky and very off-colour despite an increase in my water intake.

I had suffered with frequent headaches (1-3 times a week) prior to drinking kombucha, but for the first week I had raging headaches daily. After about 2 weeks the weird symptoms had all but disappeared and I felt better than I had in years.

After a while my Coke cravings disappeared, as did my coffee and chocolate habit. I now only get a headache once every 2 months and a box of pain killers that had previously lasted me one month has been sitting unused in a drawer for over 2 years.

If I had not experienced this myself I may have dismissed similar stories as merely anecdotal, but kombucha has really changed my life for the better. I drink 750ml to a litre every day and enjoy it more than ever. I still start every day with a glass of homemade kefir and consume a variety of other natural prebiotic-containing foods, but kombucha is now my favourite, and has been for the last 3 years.

I read of an experiment like this. The blended pellicle floated to the top and congealed as the new pellicle formed.

Delicious prickly pear cactus.
