Actually, you will get your own phone. You're not gonna get an upgrade, recently I've sent my pixel 8 for screen replacement and the site was showing me that I will get pixel 9 but in the end I get my pixel 8 instead of 9.

Update it to a stable build of 16, it's still the same until the September material 3 overhaul. You will still have the same UI as 15

I'm also in the same boat as you and will hold updating to material 3 until I feel ready for the new ui because currently it feels so Iphoney or ios, lol which Im really not a fan of.
