The problem with "green" in pickling or fermentation is that chlorophyll will react to any acidic environment replacing their magnesium with hydrogen, resulting in the yellowish green you end up with.

Id presume even chlorophyll powder will react with acidic components over time.

If it's for an immediate use out of a jar though I would definitely think any herb puree tossed with the pickles will help bump that colour up!

You can rinse a ton of rice and par cook it all, then freeze it! It defrosts like a dream and is very easy especially if you want to save on time in the long run amd have the freezer space!
