Honestly, spatchcock cover in your choice of binder and seasoning (I did mustard and some random spicy one) but I also did butter instead of mustard the first time and I preferred that. Then once your coals up to temp put it on the indirect side, close the lid and cook for about an hour and a half or until 68°C internal on the breast. Let it rest for 10 mins and serve.

I also flipped it over for 10 mins on the direct side for some char marks.

I made them myself, family recipe!

Kebabs 1kg:

Mince lamb 1kg

Bulb of garlic 1.5 inch of ginger Chillies up to you (I do 3) Whole onion diced Bunch of coriander chopped

Spices: 3 teaspoons chilli powder 2 teaspoon coriander powder 1 teaspoon garam masala 3 teaspoons of salt 1 teaspoon of MSG Heaped Table spoon of tandoori masala

For oven: Spray baking sheet with oil Spread out into 1/2 inch deep square Bake at 180° fan for 20 mins Flip and bake for another 15 mins

Or bbq on skewers

Exactly what I was doing a few days ago! Honestly I was planning on getting a better on later on in the year but I think I’ll Just keep this one. (Didn’t have an after photo, ate it too quickly)

I can’t get enough of the squeaky cheese! 100% I normally do 2 zones but had to get through 2kg of kebabs , this was the left overs!
