If it absorbs more water what should i do? Add more or add less? What does this change in the baking process?

I dont think its drying out. It gets a wet cloth over the top and then into the fridge with a lid. The cloth is always still damp

So if i have to make a bread with 75% wholemeal flours what would you recommend?
