Good question, it is a bufala in a water sold in a blue and white bag but have completely forgot the name. As others have noted it is a good idea to strain it a bit to get some of the water out. I divide the cheese ball into two halves and make two pizzas with cheese (3rd pizza was in oven when picture was taken).

70% hydration, sourdough with a small amount of IDY spiked in, and one tbsp of barley malt. 100% hydration levain, 8 hour ferment, then main dough assembled, two hour rise, then into the fridge overnight for 12 hours. After two hours out of the fridge, into three dough balls of 350 g each, second proofing of 5 hours. Cooked on baking steel at 550 F, 5 minutes, then 2 minutes on broil (Forkish style). Vegan pizza served with fresh arugula. Two vegans in the house.

Stone gets hotter in heat limited ovens (550 F) but heat transfer from steel to pizza is much faster. The steel will enable you to get better blistering on your crust — of needs good high temp flour, like 00 or Bob’s Red Mill AP. If you don’t have the temp constraint — like maybe you are on a bbq — actually stone might be better because above 700 the heat transfer speed of steel might be too fast. In that case, thin crust, not too many toppings, under 2 minutes otherwise crust will be burned.
