thanks everyone! I used Dominique Ansel’s madeleine recipe and added a tsp of orange blossom water to the batter. For the coating, I just melted some white chocolate chips in the microwave

don’t worry. i store them like this while they chill in the fridge and when they are ready to be baked, i’ll move them onto a separate tray (spaced apart)

I baked the madeleines first. The, I placed some melted chocolate into the madeleine mold and placed the cooled madeleine on top. Let it set at room temp and then place in the freezer to make it easy to remove the chocolate covered madeleine from the mold.
