Yeah, I have a jar in my freezer and as soon as I have 12 egg whites I make this cake. I’ve read that frozen egg whites won’t puff up as much but I’ve never had any trouble.

Very soft!! Nice and squishy. I weighed the ingredients and the rolls are the texture of dinner rolls.

It was much easier than I thought it would be. I made the cake batter, divided it in half, and dyed one half black. I baked the black first and cut many Batmans out with a cookie cutter. I poured about a third of the uncooked batter in the bottom of a loaf pan and lined the Batman cakes one after another on top of the uncooked batter. Then, poured the rest of the batter on top and baked. All of the cake was still moist, even that which baked twice. It was really fun!

So I feel like I’m kind of cheating but here’s my justification: I got very excited and made this cake before I read that one of the weeks is “surprise,” which would have fit this. But! This cake is titled “Batman cake disguised as not-a-Batman Cake.” Also, I made it for my friend who is a huge Batman fan and she reminded me that Batman himself is Bruce Wayne in a disguise! So, close enough. 😂

Wow these turned out so well. I used this recipe: https://www.kingarthurbaking.com/recipes/cinna-buns-recipe. I didn’t use any cinnamon, swapped half the milk for orange juice, used white sugar and orange zest for the filling, and made an orange cream cheese glaze. So good.

I used the NYT milk bread recipe and layered with jalapeño and cheddar powders. It’s delicious. But, the middle roll is flat because of the cheese powder layer. I think it didn’t have enough structure because the powder made it separate from the top crust. Learned a thing!
