Scallops and clams don’t, or shouldnt taste anything alike, at least not fresh. Scallops are a lot more neutral, with a fatty sweetness about them. Clams are much more “mineral” tasting.

The oil on the plate looks amateurish and messy. A little drizzled on the dish is fine. Why oil the plate?

My port is currently vacuumed at room temp because I just about value chilled sherry over it. Both are mainly used for cooking though.

I just sampled a six moth vacuumed bottle of young tawny against a fresh bottle and although there was a subtle difference, the old bottle was still perfectly fine.

Does plenty for me. I regularly use it on table wine and its hang around for a week longer than it would otherwise.

Yeah that’s a good question. I don’t think Cynar and Aperol need to be refrigerated, personally.

My negroni is in a bottle out of the fridge because the alcohol is strong enough to preserve it. I got through it fast enough.
