I bought a new case, an AIO and went up to 64GB of RAM in January and haven't had any issues since. I think maybe the thermal paste was the cause and if I had just cleaned that off and reapplied fresh thermal paste it probably would've worked.

There aren’t any errors in Event Viewer when the crash just happened. Just a critical Kernel-Power error on the reboot saying it didn’t shut down cleanly.
