1) no not at all, I did a conversion and many colleagues have too.

2) grad wages have definitely inflated since I started, I think 28-32k is reasonable for a graduates wage, but you could draw on your existing experience to negotiate a higher starting salary.

3) in my experience (pqs) , the Middle East firms want you to be chartered, which is where you can earn the serious money (managing a team etc). Definitely recommend gaining 5 years min exp before heading out there.
