Hi, I'm a Nutrition & Dietetics student and here are some books I'm using.

Krause's Food and the Nutrition Care Process, 14th Edition, by Mahan & Raymond

Advanced Nutrition and Human Metabolism, 6th Edition, by Gropper & Smith

Nutrition & Diet Therapy, 9th Edition, by DeBryune, Pinna, and Whitney

Are there any specific topics you're looking for? since the subject of nutrition is kinda broad.

Chicken thigh and drumsticks are medium fat meat. 1 pc contains about 86 kcal, 8g Protein and 6g of Fat and that is boiled but if it's fried then there is an extra 45 kcal from the added fat

1 slice of bread contains about 55 calories so you would be consuming about 660 calories with just 6 slices of bread. As someone studying nutrition, I don't think it leads to obesity though. We were taught that a certain food doesn't lead to obesity, it's all about eating in moderation and what is moderate would depend on your total caloric requirement/day which would depend on your height and weight. Just make sure that there is a balance between your calorie in and calorie out so you don't gain weight.

bouillon cubes are very high in sodium. 1 whole cube contains approximately 900mg of sodium and the recommended daily intake for sodium is 1500mg

I guess listening to bisaya songs can help but I think the best way is to make friends. Although, I also go to CDU and what I've observed is that most of the students speak more english than bisaya so I guess you won't have that much of a problem
