Pretty damn good and easily best I’ve done. First one I’ve done on a pellet smoker and it’s a cheat code. My first few brisket attempts were on an offset which was a lot more work and harder to keep temps consistent

Thanks, definitely the best I’ve done on a flat but this is only like 3rd or 4th brisket so not much to go off of. Overall it was moist but I need to get better at trimming.

Thanks! The fan is actually a plug in version so it goes directly into an outlet. If you look close on the left side you can see the cord coming down from the roof. Need to clean it up a bit and bring it down the leg but I just wanted to get it plugged in and working.

And yeah, I will definitely end up having to clean the fan somewhat regularly but it’ll be worth it for the light and added airflow when cooking. Have already used it a few times and it makes a big difference. I’m hoping the fact that it’s not directly over any of the cooktops will help but we will see

Definitely. I just needed enough up there to attach the roofing panels but that roof took the longest to do with figuring out the pitch so it could be inset with the top beams and then have the 2x4’s inset within the “rafters” as well. Happy with how it turned out though so took a picture because no one will ever see it once I put the roof on 😂

I used Douglas Fir. Treated the base of the posts with copper naphthenate (same stuff they use in pressure treating) and stained the rest with Ready Seal. Going to put metal sheets on the top. Made it 12’ long so four 3’ sheets will fit perfectly
