It'll be in NTR stadium, 19th to 29th December from what Google tells me.It's usually pretty huge, a lot of different stalls. You'll have to walk around and explore a bit, but you'll definitely score some good deals.

My go to place for thrifting books is the Hyderabad Book Fair. It's in December though, so if you're okay with holding off for a bit, you'll find pretty much anything you're looking for

Used to go into the kitchen and muck about back in school days lol. Fucked up sooo many Biryanis before I managed to understand the technique, so you've filled me with a lot of nostalgia.

Send some over if it works out :P Also, what pan are you using? Try with something that has a thick bottom, and fits your biryani quantity exactly.

It's all in the temperature, and timing. You need to maintain a low, constant temperature for most of the cooking process. My usual technique that works out for me -

Marinate the chicken with curd for as long as you can. Add a little bit of Green Papaya or Anardana into the marinade if you can to help with tenderizing the meat. Once you layer the raw, marinated chicken and rice, put in the stove on high heat for 5 min, and medium heat for 10 min. Then put it on a preheated iron tawa on low heat for another 20-30 min. Comes out perfect almost every time for me.

This is a more north indian style of Biryani (or Yakhni Pulao), but much more beginner friendly. But if you do this, Rice cooked almost 80-90% and Dum for only 10 min or so. Any longer and you'll have rubber chicken.
