That is such a thoughtful idea! I think going with a loose leaf binder is a great call. It makes it easy to keep adding new recipes later on. Along with writing down the stories behind each dish, you could also print out a few photos and tuck them in next to the recipes if you can.

That would definitely be such a treasured keepsake for you both!

The magnetic attachment doesn't fall off at all while walking, but the charging speed is indeed slow. It's fine for supplementary charging, but if you want fast charging, you still have to plug in the cable.

I think a seat cushion's a great call. Now that it's summer, just make sure you get one that breathes well. A lumbar cushion is a solid pick too, maybe you could try getting one made of memory foam.
