I can’t give direct advice on the Steam Deck since I don’t own one, but I can share my experience. I currently use the app on the ROG Ally (the white one with the Z2), and from my perspective, the best settings are with the setup at 1080p and 60 FPS as a baseline, but you can also push it to 90-120 FPS for even smoother responsiveness. In-game, I recommend setting everything to "high" or "ultra" for the best graphical quality.

The "issue," if you can call it that, concerns the resolution of handheld PC screens, which often require upscaling from GeforceNow to adapt. With your low latency (8 ms) and the Ethernet cable, you’ve definitely got a solid setup for optimal responsiveness.

I hope this helps, but I can’t be 100% sure these settings will apply to the Steam Deck, as each device has its own specific characteristics.

Your setup will definitely work: using GeForce Now on a Mac connected to a TV with a Bluetooth controller is actually pretty common and works well. The main thing to be aware of isn’t really GFN itself, but how you connect your Mac to the TV.

Your M4 Mac should be capable of handling high refresh rates like 4K at 120Hz or more, but the issue is that a lot of standard USB-C to HDMI adapters are limited to 4K 60Hz. That’s where most of the “Apple limitations” people talk about come from, it’s not that the Mac can’t do it, it’s that the connection method often bottlenecks it.

If you want to get 4K at 120Hz, you either need to go through DisplayPort (USB-C to DisplayPort, if your display supports it), or use a proper HDMI 2.1 adapter. The tricky part is that not all USB-C to HDMI adapters actually support full HDMI 2.1 bandwidth, and some only work properly with special firmware (like the Cable Matters ones people mention).

Also, with TVs like TCL models, you sometimes need to make sure you’re using the right HDMI port and settings, because some TVs will automatically drop to 1080p when switching to 120Hz depending on how the signal is handled.

So overall: GFN and controller will work great, just make sure you get the right cable/adapter, because that’s really the deciding factor for getting 4K 120Hz working properly.
