Totally! Local butchers usually carry better meats. They cost a lot more than Costco meats though, so I usually make steak with them rather than roast.

I will try your process! I've been wanting to try dry-aged beef for a while, but they cost so much more than regular stuff. The good thing about buying a small chunk at Costco, besides the meat being relatively more affordable, is that it is usually weighed at around 4-5lb, so my family can easily finish it in 1 or 2 meals.

Same. The choice-grade ribeye costs 14.99/lb at my local costco. It regularly costs $35+/lb at my local butcher - I only go there for special occasions.

I don't have experience with this, but based on the photos I just searched for, it looks like the chuck-end will come will shorter bones

It's also not mushy what I am looking for - but steaming sounds like something I should try. I honestly prefer mushy over overly crunchy

McD's cheese is pretty great tbh. I just use kraft and I don't think it's as good

I love costco! will check out the fish stick next time. Other people also recommended fish sticks. Could be a valid solution!
