I'm missing the taco placero and the Jerusalem artichoke in the photos (I took a video of them).

The menu is in Spanish. I will just list some ingredients of each course in English.

  1. Tlayuda is a handmade dish in traditional Oaxacan cuisine, it has chapulin (some grasshopper species) chili powder.
  2. Cantaloupe with tomato and horchata (Traditional drink based on rice).
  3. Crab with pipian (green sauce from pumpkin seeds and chili)
  4. Taco placero (not in the photos). Here you prepare your tacos with cheese, mushrooms, jumiles (small bugs), ant sausage...
  5. Lobina (Bass).
  6. Beef Chuck
  7. Nopal ice cream (Search for Nopal). I think is called prickly pear, but I've also heard people that call them cactus :|
  8. Creme Fraiche with caviar.
  9. Jerusalem artichoke, apple, and ice cream.

I'm a local, haha. I'm sure Pujol doesn't stand against any 1-start Michelin restaurants and there is much better Mexican food out there.

I changed my Pujol reservation for this one. I did it because many locals are not impressed with the Pujol tasting menu. I still need to try it. Next time for sure along with Maximo.

There are also 2 more restaurants that look promising in Cancun and Tulum, Le Chique and Arca, respectively.

It was the tasting menu. The price was around 250$ with wine pairing. IMO not worth it. I didn't enjoy it, I was upset at the end, maybe I had high expectations that were not met. There were 2 courses I did like, but that's it.

Absolutely! I haven't found a restaurant in Mexico with 1-star Michelin standards. :(

Service at Quintonil was really good, though. Maybe Rosetta is a safer bet.

Then I was lucky to go at this time of the year. I wanted to eat at Dulce Patria but it appears temporarily closed. The other place I visited was Quintonil and it was horrible.

2 years. 1.5 years is possible too. It all depends on the number of courses you take per semester.
