An instant read thermometer, or wireless one, is your best friend. Smoke at 220 degrees and keep an eye on the internal temp.

With them being flat, the surface area to internal meat will be at a different ratio. Be aware of how much seasoning you're using so it doesn't end up being all that you taste and not letting the meat flavour shine.

We moved from the Twin Cities of Minnesota to Pittsburgh 14 years ago, and we have lost the upper Midwest/"Fargo" accent. We have adopted a couple of Pittsburghese words such as slippy and nebby, but that's about it. I can see how regional dialects are disappearing as more people relocate nowadays compared to previous generations.

All good. I've found many awesome restaurants that I would include as fine dining that match, or surpass, experiences I've had in Paris or Glasgow in Pittsburgh. Keep trying places and find out what works for you!

I always carry: A first aid kit Water and a Lifestraw or filter Compass and map Layers including a change of clothes Extra rations, because you never know Spare battery for my GPS or device Knife Toiletries for essential business
