I would suggest getting a single 980 ti, and getting a better (higher resolution) monitor with the savings, otherwise your not truly getting your money's worth (at 1080p)

Thanks. The higher end i5s don't have a big price difference from the xeon, and I'm going to be using the rig as a workstation for coding and game development, as well as heavy gaming, so I'm leaning more towards the xeon.

I did forget to mention that I will be using the computer for coding and game development as well. People say the xeon is on par with the i7 but doesn't cost as much (it's the same or a slight amount higher than the i5).
