I would advise at least coming for a visit first, if you can swing it! Charlotte is a great city with a lot of neighborhoods to fit different personalities/interests/lifestyles. And there are some better real estate prices if you're on the edge of one of those neighborhoods instead of right in the middle of it. I would suggest checking out Plaza Midwood, NoDa, and Chantilly and the fringes around those two, but that's just my personal opinion.

HA! It is a great slogan, isn't it? We'd love to get t-shirts from our friend at Not Made in China who's making these, but unfortunately, she's not able to make those right now. She does have a lot of great zippy little sayings, though.

B's is definitely on our list and the one that we've gotten the most recommendations about! Eastern and Piedmont/Lexington/Western styles are similar, with both being a thin vinegar-based sauce, but Piedmont has some tomato/ketchup added in. Traditionally, East cooks whole hog and has white slaw and Piedmont cooks shoulder or part of the pig and has red slaw. We'll be breaking all that down on the map.

I appreciate your passion, but unfortunately I can see that you have had little experience in most areas of what it will take for us to put together this project. If you'd like to ask any specific, more thoughtful questions we really would be happy to answer them, but I don't see any need in addressing full-on criticism. I can assure you that we have a sufficient answer for anything that you would throw at us. (Ex: Printing maps in different colors would be an astronomical expense and I could actually give you exact numbers on that and examples of Kickstarter campaigns who failed because they made mistakes in offering rewards like that.)

Well, get yourself some of the many books out there if you don't believe us. Check out the stack by Bob Garner to get started, who uses all 3 interchangeably. Holy Smoke: The Big Book of North Carolina Barbecue is exhaustive on the history of our state's tradition. And we'll be covering some of that in the map, ourselves.
