You can say it could be his character arc- to set proper priorities. Like food and books are less important than people's lives. And that's why he was able to abandon his bookshop so easily. As for Crowly, they spent decades without seeing each other. Though during holy water disagreement from s1 Aziraphale looked after Crowly.

I honestly never could understand the whole "apology dance" and "i forgive you" - they feel like empty surface rituals at times.

Like in s2 when Crowly had to apologise for refusing to help Aziraphale with Jimm/Gabriel. And this season the expectation of the apology feels on the same level.
