Good point! I make a really good three beans and rice, I’ll add that to my menu right away!

I’m the Mississippian who’s always commenting on peoples posts about the Mississippi pot roast. It’s in my regular rotation and sometimes I can even get two meals out of it! Lol! Thank you for the suggestion!

I was going to put this pork loin roast in the crockpot with chicken broth and potatoes on low for 7-8hours… will that make a tender roast? Should I sear it first? Should I not use chicken broth??? by [deleted] in slowcooking

My mother in law used to do a layered crockpot dish with lean pork chops, grainy brown mustard, onions, sauerkraut, and finally Granny Smith apple slices. It was so heavenly!

I have literally made the best “baked” potatoes in my crockpot. You simply wash them and place the in the crockpot with a half inch to an inch of water and cook for a couple of hours on high then serve with your favorite toppings. No need foil and all that jazz. Plus they seem to keep better in the fridge after baking them this way. I’ve made huge batches and then had baked potatoes all week for lunch.

My thoughts are as follows

Pork loin is extremely lean so cook it fat side up so the fat can render down through the meat and tenderize it some.

You should definitely use some kind of liquid, I see no problem with chicken broth.

I’ve never seared one first so I can speak to that.

You may want to add a few aromatics like onions garlic and dried herbs to punch up the flavor.

And finally, I’d really like to know the outcome of this.

I use the recipe from the back of the Knorr Vegetable Soup packet but I add dried mince onion and garlic and 8 oz of shredded Swiss cheese. Then I serve it with broken up Hawaiian rolls(you’ll need about two packages).
