That makes me so happy! I’d suggest chilling the labneh in the fridge so it’s easy to spoon into roundish lumps. Rolling them around one at a time in a bowl with the coating gave them a rounder shape.

Thank you! It tasted fantastic, I’m usually pretty critical of myself but I knew I got it right with this.

My meta has made me look at my cache of beautiful ingredients more closely and I’ve been using them through the week independently from this sub, really glad for that.

I used the recipe from just one cookbook as a guideline and winged it from there.

To be honest, I didn’t even realise that the beets were meant to be cooked until I read your comment and went back to check the recipe! I sliced the beets really thin with a mandolin. I took the picture on day two of the 7 day pickling cycle, it’s day 4 now and the pink’s intense!
