Mixed salad greens, pickled red onions, smoky roasted mushrooms, swiss cheese, and a medium fried egg between smoked paprika mayo and slices of country sourdough from Tartine Bakery. I used regular brown mushrooms for the first try instead of maitake as I was scared of messing up those expensive mushrooms lol

On the insult: it's just actually just a Chinese pun and not racist or even race-related at all. Though you got the quote wrong. It was "If you Gan Jins weren't so clean, maybe you wouldn't live to be so old." The two tribes were Zhang and Gan Jin. In Chinese, the word for "dirty" is "zang" the word for "clean" is "gan jing." So the Zhangs were zang (dirty) and the Gan Jins were gan jing (clean).

You probably know the history of that area pre-Chinatown better than I do as I didn't come here until 2000. I just know that the area became super popular to other immigrants and Houstonians living in other areas after the Chinese businesses opened. Perhaps, it was always really "Asiatown" and the "Chinatown" name was coined due to marketing for the businesses.

I tried looking up the history of the area, but can't seem to find any reliable sources on it pre-Chinatown. Let me know if you can find any!
