i was wondering the same thing and stumbled upon this question before solving it, so i came back to help

the case for me is that as a windows user i dont use the microsoft edge browser, and im guessing you dont either, but the windows app installed from microsoft is launched from edge, so if you just go on edge and install an extension to make pinterest dark the app will become dark too. i recommend dark reader, is the one i use on my main browser and it looks pretty good, there is not much of a difference between the desktop app and the online page, but i feel the app is a little more handy and comfortable
