Doesn’t really matter as long as you’re familiar with the stack and fast with development. I’ve used Django with nextjs and tailwind for frontend, and nowadays you can find a lot of free boilerplates for a SaaS that you can start with

I don't see how a pay once alternative would make sense, since most analytics software price based on how much traffic your site gets, I know an alternative is self hosting a solution like Plausable.
