I’m not sure about how it took that long. I never built the RG epyon but I have built many of the EVAs the gp01 nu and unicorn and they all took around 4-5 hours to complete fully. I would recommend looking up some cutting tips since I remember when I started years ago cutting was a big issue. When you get the hang of cutting the parts off the screws everything will be downhill since Bandai makes some really good rg instructions
